Looking for a fast, high-protein and gluten-free meal that actually tastes amazing? Well the Red Cabbage Slaw with turkey is so flavorful, crunchy, loaded with nutrients and lean protein. It is spectacular! This is perfect to meal prep.
4 servings. Each serving = 53 grams of protein.
SALAD INGREDIENTS:
8oz shredded red cabbage
8 oz quinoa
2-3 medium carrots thinly sliced or grated
1 bunch of chopped cilantro
4 chopped spring onions
5 tbsp salted and toasted pumpkin seeds
5 tbsp salted and toasted sunflower seeds
1 handful of mint ( optional)
DRESSING INGREDIENTS:
4 tbsp olive oil
3 juiced limes
1-2 tsp chili powder
1 garlic clove minced/crushed
1 1/2 tbsp honey
2 tsp grated fresh ginger
salt
TURKEY INGREDIENTS:
25 oz approximately of lean ground turkey
Garlic powder
Ginger powder
Salt and Pepper
Lemon Pepper powder
Combine salad ingredients in a bowl, tear mint and mix in.
Stir salad dressing ingredients in a separate small bowl until well mixed. Taste and adjust to your liking if needed.
Brown ground turkey with olive oil and seasonings(Turkey Ingredients) on a pan set at medium temperature. Mix well so all turkey is seasoned.
Once turkey is cooked, serve yourself turkey with slaw.
If you meal prep keep the slaw separate from turkey. When you heat it up, only heat up the turkey then mix with slaw to preserve the crunch and fresh flavors of the slaw. If you want extra protein, top with 3 tbsps of hemp seeds for an additional 10 grams of protein.
