Easy Gluten-Free Carrot Cake Energy Bites

The NO-BAKE carrot cake energy bites are gluten-free , naturally sweet, diabetic friendly, and perfect for meal prep, snack or dessert.  Let’s just say they actually taste like natural, wholesome ingredients and not like artificial flavors with a ton of processed sugar.

Ingredients

CAKE INGREDIENTS:

2 cups shredded carrots

1 cup walnuts

1 cup dates

6 tbsps unsweetened shredded coconut

1tbsp chia seeds

1tsp cinnamon

1/2 tsp ground ginger

1/4 tsp nutmeg

 

FROSTING INGREDIENTS:

8 oz cream cheese

1 tsp vanilla extract

1-2 tbsp maple syrup or your choice of sugar free sweetener

Instructions

  • Combine cake ingredients in a food processor until it is mixed well and firm.
  • Roll into approximately golf size balls.  Chill in the freezer while you make the frosting.
  • Mix the icing ingredients in a bowl with a fork until well mixed.  It is easier to mix when cream cheese has been out of the refrigerator for a while.
  • Coat the carrot bites with frosting and refrigerate until ready to serve.
  • Garnish with shredded carrot and/or nuts.

These are a great option for Easter! They are super cute for entertaining.
