It’s really challenging to be gluten-free and feel 100% safe going out to eat pasta. If you want to feel 100% safe, sometimes you just need to make it yourself. I swear this spicy gluten-free penne pasta is very satisfying and packed with bold flavor. The gluten-free pasta is tossed in a rich, zesty tomato sauce with a small kick of heat. This restaurant-style dish delivers comfort and peace.

Ingredients
- 2 1/2 tbsp salted butter
- 1 cup chopped onions
- 2 tsp garlic powder
- 3 tbsp tomato paste
- 1 1/4 heavy whipping cream
- 1 1/2 tsp paprika
- 1 tsp black pepper
- 1 1/2 tsp chili flakes
- 1 1/2 tsp chili powder
- 1 tsp dried oregano
- 1/2 pasta water
- 1 cup whole milk mozzarella
- 1/2 – 1 cup shredded parmesan
- 2 boxes gluten-free penne pasta (HEB brand)
Instructions
1. Boil pasta. Follow instructions on box. The pasta I used took 10 minutes and I added a little salt to water before boiling. When done set aside and remove water. Don’t forget to save 1/2 cup of pasta water.
2. Add 2 1/2 tbsp to a larger skillet. Set stove at about medium. Once butter is melted add chopped onions and caramelize. Onions will turn brown and be soft when caramelized.
3. Add 3 tbsp of tomato paste, 1 1/4 heavy whipping cream, and all dry spices. Mix well.
4. Add pasta water, mozzarella and 1/2 the Parmesan. Mix well.
5. Add pasta and mix.
6. Top with dried oregano and the rest of the Parmesan cheese.
Notes
Don’t throw away your pasta water, you will need it in recipe. As with any recipe, you can always adjust the flavor to your liking. I will recommend if you want more salt, add more salted butter. Or maybe you want it cheesier. It’s your dish, your vibe, make it yours.
