- These healthy Cajun shrimp tacos are light yet satisfying. They are great for lunch, dinner or meal prep.
Ingredients:
3-4 Romaine lettuce leaves
16 oz medium or large shrimp
1 medium avocado
1 1/2 tbsp garlic powder
1 1/2 tbsp paprika
1 1/2 tbsp lemon pepper
1tsp Zatarain’s concentrated shrimp and crab boil
1/4 white onion
1 juiced lime
3 tbsp butter
Salt & Pepper
DIRECTIONS:
Heat pan to medium.
Combine shrimp in a bowl, drizzle olive oil, and add paprika, garlic powder, salt, lemon pepper, and Zatarain’s concentrated shrimp and crab boil.
Add 3 tbsps of butter to pan. Once melted add seasoned shrimp. Shrimp is cooked once it is not translucent. Or cook to your liking. This will only take a few minutes.
Wash your lettuce.
Now time for guacamole! In a bowl add the avocado, add diced onion, add 1 juiced lime, salt and pepper. Mix and ready!
Now assemble by adding a layer of guacamole on the romaine leaves then top with shrimp. Enjoy this healthy and flavorful dish! Great for lunch, dinner or meal prep. If you want to meal prep it, assemble them before eating.
