You are going to learn how to make these super easy and fast healthy tacos. As someone that is always looking for healthy alternatives, here is one of my unique favorites to share with you. Once you learn how to make them it’ll be so easy for you to make them over and over again!
This post is all about making these healthy tacos and this will show you that making healthier food decisions is not hard.
So let’s get started! For these tacos you will need:
Cactus tortillas
Hibiscus flowers
Queso Fresco (or use a vegan alternative queso fresco)
Avocado
Lime
Garlic, Onion
Olive oil
Salt and pepper
- Boil approximately 4 cups water and 1 cup dried hibiscus flowers.
- Bring to a boil, cover and let sit for 20 minutes. The water should have changed to the color of the flowers.
- DON’T THROW THE WATER!!! Strain the flowers and now refrigerate the Hibiscus water/ Agua de Jamaica!
- In a pan drizzle olive oil, diced garlic and onion, add hibiscus flowers, season with salt and pepper to your liking. Sautee until the onion is soft. Stir as needed, Taste and then add salt and pepper to your liking.
- Heat up your cactus tortillas
- Now make your tacos and top with avocado, fresh squeezed lime juice and crumble some queso fresco. ENJOY!!! The creaminess from the avocado compliments the tart flavor from the hibiscus flowers.
- If you want to add protein you can always sautee your choice of meat with the flowers to add to your taco. I’ve never added meat to this recipe but I feel tilapia would complement these flavors.
DON’T FORGET TO DRINK YOUR HIBISCUS TEA. A natural sweetener like agave would be excellent for the Hibiscus tea.
