Yes I said they will be a great addition to salads. Make these babies once and you can use them in different recipes through the week. This post is all about making a healthy sweet potato fries. A few simple ingredients and voila!
Trust me when I tell you these babies go quick! You will need:
1 Med/large sweet potato ( I recommend 1 sweet potato per serving. When they cook they get smaller. Since you’re already doing the work. I recommend you make 4-5 sweet potatoes and use them in salads, snack or as a side with other meals throughout your week.)

- Pre-heat oven to 425 degrees
2. Wash, peel and cut potatoes in 1/2 in. French fry shape. It’s a little bit of a workout but so worth it!
3. Put potatoes in a pan or pans. Lay them so they make 1 layer and are not in a pile, so they cook thoroughly. You can use glass pans. Use whatever you have to bake in your oven.
4. Pour just enough coconut oil so they are evenly coated.
5. Add salt & pepper to all potatoes and toss.
6. Put pans in oven for 20 minutes. Then, flip the potatoes and bake for 10 more minutes. Remember ovens are different, so check if 20 minutes is enough. Potatoes must bake enough so they look a bit toasted. The brown edges means they will have a caramelized flavor.
Let them cool and then store in your fridge.
