This post has the recipe for the Best Healthy Brownie. Believe me just because the title says healthy it doesn’t mean that it will not be finger licking good. I will be sharing the recipe so you can make these delicious brownies at home and share with your family and friends, or just for you.
I saw this recipe online, and I had to try it! It is by Katie Larimore. It’s perfect for those times you are craving something sweet. Rather than grabbing something ultra processed and inflammatory, reach for these.
INGREDIENTS:
1 cup baked sweet potato
1 cup almond butter
1/3 c Pure maple syrup grade B
1/3 c cocoa powder
chocolate chips/chunks as desired. I used chocolate chunks (the more chocolate chips, more calories/ sugar you are adding)
Let me just say these Healthy Brownies are so delicious, that I made double the measurements, so I could share! Or did I share….
INSTRUCTIONS:
- Preheat oven to 450 degrees
- Peel, wash and poke sweet potatoes with a fork. Then, chop sweet potato into at least 3 parts so it cooks quicker.
- Place sweet potato chunks on a pan and cover with aluminum foil. I did not add oil or spices. You can place parchment paper first to prevent sticking. ( I didn’t use anything and there was minimal potato sticking to the pan.). Bake for 45 minutes, then check if you can flatten your fork in them. If it moves easily they are done. If not flip the potatoes and bake 10 more minutes.
- Adjust oven temperature to 350 degrees.
- Scoop 2 cups of sweet potato and place in a bowl. Mash with a fork or potato masher.
- Add 2 cups almond butter, 2/3 cup maple syrup and 2/3 cup cacao powder.
- Chocolate chip/chunks if desired.
- Mix with fork until fully mixed.
- Place parchment paper in your pan and pour mixture in. Spread with a spatula to make as even as possible.
- I added chocolate chunks on the top only.
- Place in oven for 25 minutes.
- Remove from oven and let cool about 15 minutes.
This recipe is gluten-free, dairy-free and vegan.
