These healthy snacks are a healthy twist on carrot cake. They are filling and so yummy. You can have them with it without the cream cheese frosting.
CAKE INGREDIENTS:
2 cups shredded carrots
1 cup walnuts
1 cup dates
6 tbsps unsweetened shredded coconut
1tbsp chia seeds
1tsp cinnamon
1/2 tsp ground ginger
1/4 tsp nutmeg
FROSTING INGREDIENTS:
8 oz cream cheese
1 tsp vanilla extract
1-2 tbsp maple syrup or your choice of sugar free sweetener
DIRECTIONS:
Combine cake ingredients in a food processor until it is mixed well and firm.
Roll into approximately golf size balls. Chill in the freezer while you make the frosting.
Mix the icing ingredients in a bowl with a fork until well mixed. It is easier to mix when cream cheese has been out of the refrigerator for a while. You can garnish with shredded carrot and/or nuts.
Coat the carrot bites with frosting and refrigerate until ready to serve.
