The Red Cabbage Slaw is so fresh and delicious on its own, but when you combine it with the turkey, it is spectacular! The healthy red cabbage slaw is flavorful and packed with nutrients. This is perfect to meal prep.
SALAD INGREDIENTS:
8oz shredded red cabbage
8 oz quinoa
2-3 medium carrots thinly sliced or grated
1 bunch of chopped cilantro
4 chopped spring onions
5 tbsp salted and toasted pumpkin seeds
5 tbsp salted and toasted sunflower seeds
1 handful of mint ( optional)
DRESSING INGREDIENTS:
4 tbsp olive oil
3 juiced limes
1-2 tsp chili powder
1 garlic clove minced/crushed
1 1/2 tbsp honey
2 tsp grated fresh ginger
salt
TURKEY INGREDIENTS:
25 oz approximately of lean ground turkey
Garlic powder
Ginger powder
Salt and Pepper
Lemon Pepper powder
DIRECTIONS:
Combine salad ingredients in a bowl, tear mint and mix in.
Stir salad dressing ingredients in a separate small bowl. Taste and adjust to your liking if needed.
Brown ground turkey with olive oil and seasonings on a pan set at medium temperature. Mix well so all turkey is seasoned.
