This cloud bread recipe is definitely a keeper! It is light but really does have a “real” bread consistency with only 1 carb and gluten-free. YES please!
INGREDIENTS:
4 large eggs
1/4 tsp cream of tartar
1/2 tsp salt ( I never count salt & pepper as an ingredient, FYI)
8 oz cream cheese ( leave out of fridge for a bit to soften)
DIRECTIONS:
1. Preheat oven to 285 degrees F
2. Separate egg whites and yolks in separate bowls
3. Add cream of tartar and salt to egg whites. Beat with mixer until stiff peaks form
4. Beat egg yolks and cheese in the separate bowl until mixed well
5. Combine/fold egg whites and yolk mixture gently with a spatula
6. Layer parchment paper on a baking sheet. Scoop mixture into disc shapes on pan. Should make about 12 discs
7. Bake 25-30 minutes or until golden
8. Cool completely
You can store in an airtight container up to 5 days.
To reheat use a toaster or air fry 1-2 minutes
