INGREDIENTS:
150 g raw pistachios
400 g Medijool dates chopped
2 tsp cinnamon
1/2 tsp cocoa powder
2 tbsp tahini
pinch of salt
DIRECTIONS:
1. Dry toast divided pistachios on medium for 5-8 minutes.
2. Roughly chop 125 g of pistachios.
3. Finely chop 25 g of pistachios or place in a blender/food processor.
4. Add chopped dates and tahini to same pan used previously. Mash with a wooden spoon until a smooth paste consistency forms.
5. Remove from heat and add chopped pistachios, cocoa, cinnamon and salt. Fold in ingredients.
6. Use parchment paper to roll and create a roll. Coat in finely chopped pistachios.
7. Freeze roll for 30 minutes, then slice. Enjoy!
